This week, I was cookbook-less and completely uninspired when I went to Gelson's, so when I saw the rack of recipes by the fish, I picked one up.
It actually tasted pretty good, so I figured I'd actually record what I did, as the recipe was NOT completely accurate!
Red Snapper with Tomato Cumin Sauce
For Four servings
The Sauce
1.5 tsp cumin seeds
2.25 cups chopped tomatoes
.25 tsp red pepper flakes
2 tbsp white wine vinegar
2 tbsp chopped fresh parsley
Add cumin seeds to small skillet. Brown them. Add the tomato, and red pepper flakes. Wait a bit. If the tomatoes are not juicy and hence blackening, add 1/4 cup of water! Wait until it's kinda liquidy and then add the vinegar. When you have something that looks like tomato mush, add the parsley and stir it around a bit. You can salt to taste, but it was quite tasty without salt, so I didn't add any.
The Fish
I prepared the fish one at a time.
Sprinkle the fish on both sides with salt and pepper (~0.5 grams a side...I'm a chemist!) Coat the fish in a light layer of flour. In a large pan, add 1 tbsp butter and 0.5 tbsp olive oil and heat. Fry the fish! Once it gets white on the edges and a little brownish on the bottom (~4-5 min?), turn it over. Fry it some more!
Add sauce to fish! Serve! Yaaay!
Potatoes
Two servings for normal people. Eight Crystal servings :p
4 red potatoes
0.25 tsp salt
0.25 tsp dried oregano
0.125 tsp garlic salt
butter
Preheat oven to 350 F. Boil potatoes for 10 minutes. Cut into halves. On a plate, create dry mix of salt, oregano, and garlic salt. Coat each half-potato in butter and roll it in mixture. Bake until soft...(20-25 min?)
Dinner was yummy and I'm totally full now.
